Creamy Mexican Soup
Despite some days till reaching the upper 80's, I have been craving comfort, cold weather foods - especially soup. When I saw this recipe on Pinterest, I wanted to try it immediately because of how easy it looked. It's one of those carefree, fool-proof recipies that I know I will always be going back to. So delicous, creamy and spicy!

Creamy Mexican Soup
1-15 oz can Rotel diced tomatoes with green chilies
1-15 oz can corn, drained
1-15 oz can black beans
2-3 frozen boneless, skinless chicken breasts
8oz 1/3 less fat cream cheese
1 packet dry ranch dressing mix
1 tablespoon cumin
1/2 teaspoon cayenne pepper

Place all in a crockpot and cook on high for 4-5 hours or until chicken is done. Shred chicken and serve!Creamy Mexican Soup
