Greek Quesadillas

I am still working on incorporating more Greek food into my life, and try making the more difficult, time-consuming delicacies of the land, but I found myself wanting something immediate and simple. Greek Quesadillas. The marriage of two cultures into one delicious meal.
(This is a very loose recipe and totally open to re-interpretation)

Greek Quesadillas
2 medium onions, sliced
4 raw small chicken tenders
olive oil
salt and pepper
Greek Dressing
2 large tomatoes, sliced
1 cucumber, diced
feta cheese
4 medium sized tortillas

1. Saute onions and raw chicken in olive oil over medium high heat. Stirring constantly until chicken is cooked and onions are transparent, adding a little Greek dressing along the way. Salt and pepper to taste.
2. Bring heat to medium low and add tomatoes and cucumber, a bit more dressing and saute for 3 more minutes. Transfer filling to a plate.
3. Spray pan with cooking spray and place a single tortilla, bring heat to medium. Flip the tortilla until it becomes bubbled, crispy and golden.
4. Add filling to half of the tortilla and sprinkle with feta cheese. Fold over in half, transfer to plate and enjoy!

Makes about 4 quesadillas

You can add olives, artichokes, bell peppers - the possibilities are endless!
