Fresh Grape and Goat Cheese Crostini

Summer means oven and stove-less meals, especially if you are living in South Carolina and there are cracks in your oven door. 
I just made these Fresh Grape and Goat Cheese Crostini, that were cool, refreshing and fast - an hors de oeuvres that requires no cooking. 
If you're like me, you spend a good while squeezing grapes in the grocery store in order to find the perfect bag with firm, crisp, crunchy grapes. It's an art form that is a result from eating soft and soggy grapes as a kid. It took a lot of will power to save a few grapes just to make this snack, but was totally worth it. So, so easy to put together too.

Fresh Grape and Goat Cheese Crostini
1 cup grapes, cut lengthwise
1/4 cup balsamic vinegar
2 tablespoons honey
fresh mint
honey goat cheese
crostini or pita chips

Marinate the grapes in the vinegar, honey and a few torn leaves of mint for 30 minutes or overnight (or for a few days). Spread goat cheese on crostini or pita and spoon grapes over, top with more fresh mint and drizzle with honey.

Makes about 8 crostini
