Our second day in NorCal we drove along Highway 1 and through Big Sur. Last year when we went it was super overcast and foggy, but this time it was clear and sunny. I really like that I have seen this beautiful place in two very different conditions because it completely changes the landscape - last time it looked like I could be anywhere in the black waters of the Arctic or in the fog of Ireland.
Nevertheless we throughly enjoyed this year's sunny disposition and continued our tradition of getting some fried calamari steak sandwiches to go and devouring them while overlooking the Pacific.

Mixtape Monday: Cold & Cosy

It snowed in Chi-town two weeks ago while the Autumn leaves were still on the trees. Two seasons fighting for attention, trying to one-up each other. It was pretty cool to see as a Southerner, because the snow is still a novelty to me that I get giddy about (ask me again in March). 
Even though the cold weather as welcomed mice into my apartment and a wind rash on my neck, I'd still like to compliment this chilly weather with a playlist: feel-good tunes with a vintage vibe and full of soul to keep you cosy and warm.

the drive to Carmel.

I arrived in San Francisco last Wednesday, rendezvoused with my parents at the airport (the first of many, according to my Dad), and then hit the road to Carmel where we would be staying for the next few days. The drive was hilly and gorgeous, the norm on this sort of trip. We stopped to get some goodies from Trader Joes and watched the birds form patterns over the sunset, all followed by a sushi dinner.
So lovely.

I've been in Northern California for the last week, driving along Highway 1 and sightseeing in San Francisco. It's a trip that has sort of become an annual vacation for my parents and I.
I cannot wait to share the pictures!

It feels so good to be using my crock pot again because it means anything I make in it will be super easy, hot, and comforting. 
I highly recommend this 
 by Just a Taste
It's such a foolproof recipe (I even skipped the whole using cornstarch to make a sauce bit) and it is sure to satisfy your Chinese take-out cravings. I served mine over brown rice and steamed broccoli.

Dream the Dare by Pure Bathing Culture

I think I've been enamored with stop-motions and claymations ever since I first saw those classic 1960's Christmas movies (you know what I am talking about - they are always part of ABC Family's 25 Days of Christmas). I can really appreciate the hours, patience, and craftsmanship it takes to just make a few minutes worth of action (as seen hilariously on Parks and Rec by an unemployed Ben). 
I am loving this video so much - the cool, purple color palette, the geometric paper landscape, the beautiful and interesting looking birds - not to mention a pretty great song.

1. The Night Comes Again - St. Lucia (I feel like I've been waiting forever for this album to come out, well I do think it has been 1.5 years... and St. Lucia doesn't disappoint with their tropical, 80's synth debut.)

2. Pyromaniac - Oh Land (Her latest album is just as quirky and experimental as ever, with still being catchy.)

3. By The Throat - CHVRCHES (This trio never fails to impress me - this track is especially glittery.)

4. White Teeth Teens - Lorde (coolest teen ever)

5. Tether - CHVRCHES (very M83 - they really should collaborate)

6. Work - Iggy Azalea (OBSESSED WITH IGGY, her bad-ass-ness in unreal)

Sausage, Kale, & Navy Bean Soup

It's officially soup season in Chicago. I started by making one of my all-time favorites: Creamy Mexican Soup - I make it at least once a month in the winter. 
I think I'll be adding this Sausage, Kale, & Navy Bean Soup to my repitore. I've never cooked dry beans before this and was pleasantly surprised on how it completely changes the soup's flavor and texture (not to mention saves some extra $). This soup can be easily cut in half - but if you use my quantities, you can always freeze the other half for later. 

Sausage, Kale, & Navy Bean Soup
adapted from this recipe

1 lb. dry great northern beans
2 medium yellow onions, chopped
4 cloves garlic, minced
1 lb. spicy turkey Italian sausage (feel free to use pork sausage if you prefer)
2 (15 ounce) cans diced tomatoes
4 cups chicken broth
1 - 10oz bag chopped kale, remove as many stems as possible
salt and crushed red pepper to taste

1. Place beans in a large bowl, cover with cool water, and let soak in the refrigerator over night.
2. The next day, in a large soup pot, mix together onion, garlic, drained beans, and diced tomatoes. Pour chicken broth over top of everything and place sausage links on top. 
3. Bring to a boil over high heat and cool until beans are soft and sausage is cooked, about an hour.
4. Once sausage links are cooked, slice into pieces, and add back to the soup. Stir in the kale until wilted and cooked through. 
5. Add salt and crushed red pepper if desired. Serve hot.

Ceren Kilic is an amazing collage artist who beautifully combines vintage back and white photos with very on-trend geometric shapes and colors. The results are fantastical and remind me of a scene from a dream. 
She's got a Society6 shop as well, where you can get any of these as prints, cell phone covers, totes, etc.
