I just shaved off a few minutes of my morning routine by making this overnight muesli. Now all I have to do for breakfast is take out a bowl from the fridge and stir. It's a winning combination of oats and yogurt with a hint of honey. The possibilities are endless with this one - you can substitute all sorts of dried fruit and nuts - whatever you have on hand. Not to mention, this breakfast is full of protein and fiber.
Morning Muesli with Golden Raisins & Almonds
(adapted from Super Natural Everyday by Heidi Swanson)
3 cups rolled old-fashioned oats
1/2 cup roasted almonds
1/2 cup golden raisins, plus more to serve
1/2 cup wheat germ
1/4 tsp sea salt
1. Toss together oats, almonds, raisins, wheat germ and salt in a large bowl. Store in an airtight container/jar until you are ready to use it.
2. For each serving, spoon 1/2 cup yogurt into a bowl and thin with 1/4 cup water. Stir in 1/2 dry muesli, desired amount of chia seeds, and honey to sweeten slightly. Cover bowl with plastic wrap and let sit in fridge overnight. Add extra raisins when ready to eat.
