Tartines (open face sandwiches) are my new favorite breakfast food. I feel like with breakfast it's easy to get into a rut of eating the same thing for months until you begin to not have an appetite for anything. I've been trying to switch things up - to make sure that I do eat something in the morning, and all the school years of cereal and pop tarts are making me want anything but sugar.
Tartines are also a great way to get some veggies in first thing and keep you satisfied well into your day.
Butternut Squash, Arugula, & Goat Cheese Tartine
Sauté cubed butternut squash with minced garlic in some olive oil until tender and cooked through. Season with salt and pepper. On a warm toasted slice of hearty bread, spread herbed goat cheese and top with arugula and butternut squash.
Leftovers can be kept separately for several days (just reheat squash in microwave before putting on toast)
