Roasted Veggie Pita Pizzas
Let's talk about this: Whole wheat pita crust. Avocado-lime sauce. Indian roasted veggies. Goat cheese. Kale for added nutrition. 
So freaking gourmet. 
I'll be making these again....

Roasted Veggie Pita Pizzas
adapted from this recipe
Avocado Sauce
2 ripe avocados
2 cloves garlic
2 tablespoons olive oil
2 tablespoons water (more as needed)
½ teaspoon salt
1 teaspoon cumin
juice of one lime

Roasted Veggies
2 heads cauliflower, cut into small florets
2 14-ounce cans chickpeas, rinsed and drained
2 teaspoons chili powder
2 teaspoons garam masala
½ teaspoon cayenne pepper

6 small whole wheat pitas
chopped kale
goat cheese
salt and pepper to taste

1. Roasted veggies: Drizzle cauliflower and chickpeas on a baking sheet with olive oil and sprinkle with spices. Give the pan a gentle shake to sort of mix things around. Roast for 15-20 minutes at 425, stir, and roast for an additional 15-20 minutes.
2. While the veggies are roasting, puree the avocado sauce ingredients in a food processor or blender. Set aside.
3. To assemble, spread each pita with a spoonful of avocado sauce and top with roasted veggies and kale. Sprinkle with extra salt, pepper, and goat cheese crumbles. Broil in oven for about 6 min, or until crust is browned and cheese is toasted

Healthy Chicken Pot Pie

A few weeks ago I needed some comfort food. I also needed to be healthy, which is so so hard in the winter. I devised this less-guilty version of chicken pot pie to curb my cravings. Take out the crust on the bottom and make a "cream sauce" from pureed white beans. 

Healthy Chicken Pot Pie
1 lb chicken tenders, cut into chunks
1 onion, chopped
16 oz bag frozen mixed veggies (I used Trader Joe's Vegetable Melange in Butter Sauce)
1 lb fingerling potatoes, cut in half
salt and pepper
15 oz can white beans, pureed
1 1/2 cups chicken broth
Greek seasoning
16 oz can biscuits

1. Saute chicken and onion with olive oil in a large pot, salt and pepper to season, until chicken is cooked throughout.
2. Add frozen vegetables and potatoes and cook until veggies are no longer frozen and potatoes are tender, about 8 min.
3. Stir in pureed white beans and broth. Season to taste with salt, pepper, and Greek seasoning.
4. Pour into 9x13 baking dish and top with biscuits. Bake according to biscuit directions.

Everything should be bubbling and the biscuits golden. Devour.

5 Winter/Spring Beauty Essentials

These have been my go-to's lately:

I apply this mousse right after washing my hair, work it into my roots, and go to bed with a wet head (I'm one of those people). After it dries, it feels crunchy at first, but once you run your fingers through your hair a couple times and style, it leaves your hair full of volume without all that extra reisdue or stiffness that other mousses tend to have.

I use a hot curling wand twice a week to do my hair, with touchups in between. This product is a two in one heat protectant and hair spray hold. Totally worth the extra $$. It smells great and makes my hair feel healthy. 

CeraVe Moisturizing Lotion (for normal to dry skin)
FINALLY I have found a cure to this awful, scaly, dry winter skin of mine. My dermatologist recommended it and it literally fixed my skin overnight. 

Revlon Colorburst Matte Balm in Sultry
I have received so many compliments on this universal lip color. It's the perfect mauve shade that looks like your natural lip color only slightly saturated. The formula is a little dry because its matte, so I recommend putting on some balm before or after applying. It lasts almost all day too.

Model Co Powerlash Black Mascara
Got a sample of this in my Birchbox and immediately ordered the full size. It's crazy how long and full it makes your lashes look, but in a clump-free way.

Mom's Italian Meatloaf

My mother is a woman of few recipes. Most of the delicious meals she made for us growing up were improvised on the spot and more often than not weren't replicated twice (we also ate a lot of leftovers and the combining of the leftovers). 
One recipe she DID have written down, a comfort food, was for her Italian Stuffed Meatloaf. She saw the recipe on a Quaker Oats can back in the 70's and has loved it ever since. Yes, there are oats in this meatloaf - and zucchini and pasta sauce! 

Mom's Italian Meatloaf
1lb ground lean beef
1 cup old fashioned oats
15 oz jar pasta sauce
1 onion, chopped
1/3 cup parmesan cheese
1 egg
1 tsp pepper
1 tsp salt
1 cup shredded mozzarella cheese
1 zucchini, shredded

1. Mix beef, oats, 1/2 cup sauce, onion, parmesan, egg, salt and pepper in a large bowl until combined. 
2. Smash half into a 9X5 baking dish, top with 1/2 cup mozzarella cheese and zucchini. 
3. Smash the rest of meat mixture on top and top with remaining mozzarella and sauce. 
4. Bake at 350 for 40-45 min, or until done.
