I'm into all things Cuban - plantains, tres leches cake, black beans, sandwiches, making crafts out of cigar boxes, Ricky Ricardo. One of the characters I do is Cuban by way of Miami, Rosa, and she is dear to my heart.
Since it's taco season, I thought it would be cool to combine the ingredients that made a Cuban sandwich into taco or wrap form.
Here's what I did and it's super easy.
Lay out your tortilla and place a slice of ham, some Cuban style black beans, and shredded swiss cheese. Heat it up whichever way you like so that the cheese melts - I did the microwave. Add some sweet pickle slices and yellow mustard. Fold and eat.
