I try to eat meals with a heavy veggie base. Key word: try. For whatever reason I was craving a Philly Cheesesteak (mind you, I've had maybe 2 my whole life) but then saw a recipe for stuffed zucchini on Pinterest, which brings us here....
Philly Cheesesteak Stuffed Zucchini
2lbs ground beef
2 small onions, thinly sliced
2 green bell peppers, chopped
1/3 cup Worcestershire sauce
Lawry's Seasoned Salt, to taste
black pepper, to taste
cayenne pepper (optional)
8oz 1/3 less fat cream cheese
4 zucchinis, cut in half and scooped out centers
1. Cook the beef, onions and peppers until soft and all meat is cooked.
2. Drain meat mixture and bring back to pan over medium heat. Add Worcestershire sauce, salt, pepper to taste. Stir in the cream cheese until everything is melted and creamy.
3. Place zucchini on baking sheet and fill with meat mixture.
4. Bake at 400 deg. for 30 min. Turn oven off and add cheese on top and return to oven until cheese is melted on top.
Nom Nom and healthy too! Who needs bread and American Cheese anyway :/
