Pimento Chicken Salad, y'all

Summer is in full swing - and so is the heat. It's time for a oven-free dish - and a Southern inspired one too. You would think being from the South I would have more Southern recipes on here....

Pimento Chicken Salad
1 1/2 lbs chicken breast, cooked and shredded 
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon pepper
3 green onions, thinly sliced
1 (6-ounce) jar pimentos, drained
8oz white cheddar cheese, grated
3/4 cup plain greek yogurt 
1/2 cup mayonnaise
bread and butter pickles and crackers, for serving

Mix together everything in a large bowl, adding more salt and pepper as needed.

Lady Cave {Chairish}

I teamed up with Chairish, an exclusive curator approved - online marketplace for vintage furniture, to bring you my dream "Lady Cave." 
My parents have an under-the-sea themed basement since my dad is a scuba diver (see: seashells, under water pictures, and even a themed Christmas tree that's up all year long). 
If I ever have a basement I would love to borrow from that idea and 60's Tiki bars. 
I'm thinking... palm wallpaper, an actual Tiki bar, pineapples, flamingos, wicker furniture, a real aquarium, a neon sign. A little vacation all year long. 
A big inspiration for this is Lost Lake - a hip Tiki bar in Chicago with potent drinks. I'm obsessed with their whole vibe. 
These vintage bar stools from Chairish are exactly the look I'm going for! How cute!

Summery Pesto Zucchini and Corn Couscous

After 3 summers of no AC, I'm finally getting a little window unit! Here's to not sweating right after I get out of the shower!

So yeah, it's hot, which makes me crave summer veggies and fruits and lots of La Croix.
This bowl of savory summer vegges and Israeli couscous is a perfect seasonal dinner.

Summery Pesto Zucchini and Corn Couscous
inspired from this recipe

1 cup whole wheat Israeli couscous
1/4 cup olive oil
2 cloves garlic, chopped
2 medium sized zucchini, diced
1 cup corn, fresh or frozen
salt and pepper to taste
1 (15 ounce) can of chickpeas, rinsed and drained
1/4 cup chopped green onions
1/2 cup basil pesto (homemade or store bought)
juice of 1 lemon

1. Cook couscous according to package directions (I add a bouillon cube to mine), let cool.
2. Meanwhile, prep the zucchini and corn, heat the oil over medium-high heat, add the zucchini and corn and cook until tender, about 12 minutes, before removing from heat and seasoning with salt and pepper to taste.
3. Toss zucchini and corn along with the couscous, chickpeas, green onions, pesto and lemon juice.
